Chicken ๐
8 medium sized chicken legs/thighs/wings (No breasts)
Marinade
3 cups buttermilk
1 tsp salt
1.5 tsp MSG (optional)
2 tsp white pepper
1 tbsp paprika
1 tbsp garlic powder
Dredge
3 cups all purpose flour
2 tsp salt
2 tsp thyme
1.25 tsp MSG (optional)
2 tsp oregano
1 tbsp celery salt
2 tsp black pepper
1 tbsp dried mustard
2 tbsp paprika
2 tbsp garlic salt
1 tbsp ginger
3 tbsp white pepper
Fries ๐
2-3 large russet or starchy potatoes
2 tbsp white vinegar
Water
Salt (to taste)
Vegetable/Canola Oil (or your fry oil of choice)
Fried Shrimp๐ค
1 dozen raw shrimp
Breading
1 cup Panko Bread Crumbs
1 tbsp garlic salt
2 tsp black pepper
2 eggs
1 tbsp water
1/2 cup all purpose flour
pinch of salt
Additional items
1 pound of fresh strawberries ๐
1 can/bottle of Diet Coca-Colaยฎ ๐ฅค
Step 1
Cut your potatoes into 1/4 - 1/2 inch slices (depending on your preferences). A serrated knife is recommended to create a microscopic rough edge to your potatoes which will help make them crispy later. As youโre cutting place the finished slices in a bowl of cold water. Against popular beliefs, DO NOT let the potatoes soak. After all potatoes are cut, immediately rinse the fries in cold water 2-3 times and then drain๐ฟ
Step 2
Place your fries in a pot and fill it up with cold water about an inch above the fries. Add a heavy amount of salt (just like pasta water) and your vinegar. Place the pot on a medium high heat until it starts to boil. Once the water boils, reduce the heat to low and let the fries simmer for 10 minutes. While your fries are boiling, fill a heavy bottom pot or pan with your fry oil of choice and place on medium high heat ๐ฅ
Step 3
While your fries are boiling, itโs a perfect time to start marinading your chicken. In a large bowl, add your buttermilk, salt, MSG (optional), white pepper, paprika and garlic powder and whisk it together. Then add your chicken pieces and cover with plastic wrap. Let them sit for at least 30 minutes but ideally overnight in the fridge. If youโre preparing all at once like me then 30 minutes is plenty of time to add flavor ๐
Step 4
After this, your fries will be done boiling. Remove them from the water and place them on a paper towel lined tray and let them steam dry for 5 minutes. Your oil should also be getting close to temp which should be 400 โ or about 205 โ. After your fries are completely dry, add 2-3 small spiders of fries to your hot oil. CAUTION! Please remember to go slow and only add small amount at a time. Oil could boil over and cause a serious fire. Please be cautious and also have a fire extinguisher near by. After you add your fries to the oil, let them fry for 1 minute and then remove and place on another paper towel lined sheet. After all the fries are done, let them sit for 30 minutesโ
Step 5
Fill a heavy bottom pot with your frying oil of choice and place that on medium high heat. And now itโs time to finally coat our chicken in the famous 11 Herbs and Spices (well no one truly knows but this is what I came up with). In a medium sized bowl add your flour, salt, thyme, MSG (optional), oregano, celery salt, black pepper, dried mustard, paprika, garlic salt, ginger and white pepper and whisk together thoroughly. After this, take your marinated chicken and place one piece at a time into your flour dredge. Pack the dredge onto every possible nook and cranny of the chicken and then shake off the excess. Repeat with all of your chicken ๐
Step 6
Time to fry! Your oil should be getting close to the right temp which should be 350 โ or 177 โ. Place 2-3 pieces of chicken into your hot oil, one at a time. You will notice that your fry oil will drop in temperature to about 300-325 โ or 149-163 โ. THIS IS EXACTLY what you want. Keep the temperature in this range and cook your chicken for 10-20 minutes (depending on the size and cut of chicken) or until the chicken is golden brown and has reached an internal temperature of 165 โ or 74 โ. Remove your chicken when its done and place on a wire rack or paper towel lined tray. Repeat with all of your chicken as you complete the next 2 steps๐
Step 7
While your chicken is frying in Step 6, its time to prepare our shrimp. Youโll need 3 small/medium sized bowls. Add your flour to bowl 1, your eggs to bowl 2 and your Panko Bread Crumbs, garlic salt and black pepper to bowl 3. Whisk the eggs until smooth, and whisk the bread crumbs until thoroughly combined. First place your shrimp in the flour, then the egg and then the bread crumbs (if you like extra crispy, you can take the bread crumb covered shrimp and place it back in the egg and then the bread crumbs again for a double coat). Repeat with all of your shrimp๐ค
Step 8
Finish frying everything. At this point youโll probably have a few more pieces of chicken, your fries and your shrimp. Its time to fry it all! Continue cooking your chicken like Iโve explained in Step 6. Then I would recommend frying your shrimp. Heat your oil to 400 โ and place in your shrimp and cook for about 2-4 minutes or until they reach an internal temperature of 145โ or 63โ. Top your hot shrimp with some additional salt and garnish with parsley (optional). Next, get your oil back up to 400โ and cook your fries for 2-4 minutes also or until golden brown. DO NOT overcook or your fries will get dry. Remove your fries and immediately add your fry seasoning of choice such as plain salt, cajun etc๐ง
Step 9
Plate your shrimp and your fries and grab your favorite dipping sauces. Next grab KFC Bucket and fill it up with your fried chicken. Grab your strawberries and your Diet Coca-Colaยฎ and EAT UP! ๐ฝ๏ธ
