Pizza 🍕

Dough

475 g All Purpose Flour

15 g Fine Salt

13 g Granulated Sugar

290 g Water

7 g Instant Yeast (one packet)

Sauce

2 Tbsp Olive Oil

3 1/2 Tbsp Unsalted Butter

4 Cloves Sliced Garlic

28 oz can San Marzano Tomatoes (plus half can water)

1 Tbsp Granulated Sugar

1 tsp Thyme

1 1/2 tsp Oregano

Salt (to taste)

1 Sweet Onion (halved with root on)

Toppings

1 lb Freshly Grated Low Moisture Whole Fat Mozzarella Cheese

Toppings of Choice (I chose Sausage, Bacon and Pepperoni)

 

Marshmallows🤍

Dust

1 C Corn or Potato Starch

1 C Powdered Sugar

Base

1 C Water (2 - 1/2 Cups)

3 Envelopes of Gelatin

1 1/2 C Granulated Sugar

1 1/4 C Light Corn Syrup

Pinch of Salt

Hot Chocolate ☕🍫

1 C Whole Milk

2 Tbsp Heavy Cream

Splash of Vanilla Extract

2 Tbsp Brown Sugar

1 1/2 Tbsp Unsweetened Cocoa Powder

NOTE: There are two methods to cook the pizza in this recipe; one method for a pizza oven and one for a home oven. The only difference is the cooking, so I’d like to state those differences here before we start. If you’re going to use a pizza oven turn your oven to 650℉ or 343℃ for its recommended heat up time (all pizza ovens are different) and if you’re using a home oven, place a pizza stone in and turn it to maximum temperature, usually 550℉ or 288℃, for at least an hour before cooking. Let’s get cooking.

Step 1 - The Night Before

For this recipe, it all starts the night before and the first thing to do it make the pizza dough. Take your water and place it in the microwave and heat that to around 90℉ or about 32℃. Add your instant yeast and sugar and stir to dissolve. Set that aside to ferment 5-10 minutes. Now it a large bowl add your flour and your salt and whisk that together. When your yeast mixture is ready, pour that into your bowl and mix my hand until you get a rough dough. Take your dough out of the bowl and place it onto a work surface and kneed the dough for about 3-5 minutes until you get a smooth texture. Roll that into a ball and place into a greased bowl and cover with greased plastic wrap, make sure the completely seal the bowl. Place this in the fridge and use in 12-48 hours. The longer you wait the more flavor the dough will have but don’t wait for more than 2-3 days, it starts getting weird after this point

Step 2 - The Night Before

Next is the marshmallows! In a medium sized bowl add the powdered sugar and corn or potato starch and whisk that together. Set that aside. Now, in a stand mixer, add 1/2 cup of the water and the gelatin packs and whisk that together. Next, in a medium non stick pot, add the sugar, corn syrup, the other 1/2 cups of water and the pinch of salt. Stir this together and let this cook over medium heat until it reaches 240℉ or 115℃. Immediately remove from the heat. Place the whisk attachment on your stand mixer and turn it on low and let it whisk the gelatin. Slowly pour the sugar mixture down the side of the bowl. Increase the speed of the mixer as you pour. Let this mix on medium high speed for about 5-10 minutes. You want this to be THICK! Now take a pan of choice and spray that with cooking spray. Next dust your pan with the sugar starch mix. Pour your marshmallow mixture into the pan and used an dusted spatula to help scrape it out of the bowl. Wet your hands and press the mixture flat. Let these sit uncovered for 12 hours and they’ll be ready to cut!

Step 3 - The next day

Take the dough out of the fridge and place on a work surface. Divide the dough into even pieces weighing between 275-300 grams each. Roll those into balls and place in a lightly floured pan and cover with plastic wrap and let that sit at room temperature until double in size, about 2-3 hours.

Step 4

While the dough sits we can prep the rest of our recipe. First the sauce. In a medium sized pot add your olive oil, butter and sliced garlic and let that cook until the garlic starts to get browned. Add your can of tomatoes and then fill the can up half way with warm water and add that to the pot as well. Stir. Add the oregano, thyme, sugar and salt to taste and stir that in. Add your halved onion and let that simmer and cook for about 20 minutes. Remove the onions, let that cool and it’s done.

So with this next step its all based on your topping preferences. The only thing that is needed is to freshly grate 1-2 lbs. of mozzarella. I chose to do a meat pizza with pepperoni, sausage (provided by Mabel’s Pizza Shop) and bacon. In this case, you will need to slice some fresh pepperoni, cook some bacon with whatever method you prefer and cook up some sausage and season it to taste. Now that you have all your toppings prepped, the pizza cooking process will begin when you’re ready. However, I recommend doing steps 6-7 before cooking your pizza so you can have the freshest, hottest pizza possible. Reminder: If you’re using a pizza oven, turn that to 650℉ or 343℃ and if you’re using a home oven, place your pizza stone in and turn that to maximum temperature, usually 550℉ or 288℃ for at least an hour before cooking.

The next two steps will be prepping the hot chocolate for easy assembly after cooking the pizza. This step will be cutting the marshmallows. Dust some of your sugar-starch mixture onto a work surface. If you dusted your pan well then the marshmallows should come out very easily onto your work surface. Spray a knife with cooking oil and dust the knife with the sugar-starch mixture and cut your marshmallows to your desired size.

Now the hot chocolate. Add all the ingredients into a small pot and whisk to combine. If you want your hot chocolate fresh and hot, wait to place over a medium heat until your pizza is done. When you’re ready place over a medium heat until it reaches your desired ‘hotness’. Pour into a mug and top with your marshmallows and fresh grated dark chocolate.

Step 8

Now to cook the pizza! Whether you’re using a pizza peel or simply a piece of cardboard, sprinkle cornmeal or semolina on either for easy sliding of the pizza into the oven (Don’t use flour! Trust me I made this mistake lol). Lightly flour a work surface. Grab a dough ball and punch the middle and move outwards to create a crust. Pick up your dough and stretch it on your knuckles in a circular motions until it reaches your desired thickness and width. Place onto your pizza peel or cardboard. Next add your desired amounts or sauce, cheese and toppings and then place into your oven. If you’re using a pizza oven cook about 2-4 minutes or if you’re using a home oven cook for about 6-8 minutes. Remove and cut. Grab your hot chocolate and ENJOY!
